- 300g (about 10.5 oz) shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups fresh tomatoes, diced (or cherry tomatoes halved)
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
- Cook the Spaghetti:
- In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
- Prepare the Shrimp:
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Fry the Shrimp:
- Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using).
- Cook for about 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
- Add Fresh Tomatoes:
- In the same skillet, add the diced fresh tomatoes. Sauté for about 5 minutes until they start to soften. You can add a splash of reserved pasta water if needed.
- Combine:
- Add the cooked spaghetti to the skillet with the tomatoes. Toss to combine, adding more reserved pasta water if needed to create a light sauce.
- Add the fried shrimp back to the skillet and toss everything together gently.
- Serve:
- Plate the spaghetti and shrimp, garnish with fresh basil, and sprinkle with grated Parmesan cheese before serving.
