Berry-Topped Classic Cheesecake

Ingredients

For the Crust:

  • 1 1/2 cups (150g) graham cracker crumbs
  • 1/3 cup (75g) unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Filling:

  • 24 oz (680g) cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60ml) sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs

For the Topping:

  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup berry jam (any mixed berry or raspberry jam)
  • 2 tablespoons water

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture evenly into the bottom of a 9-inch (23 cm) springform pan. Use the back of a spoon to flatten it.
  4. Bake for 10 minutes, then set aside to cool.

2. Make the Filling:

  1. In a large bowl, beat the cream cheese and sugar together until smooth and creamy.
  2. Add the sour cream and vanilla extract, mixing until well combined.
  3. Beat in the eggs one at a time, just until incorporated (avoid overmixing).
  4. Pour the filling over the cooled crust, spreading it evenly.

3. Bake the Cheesecake:

  1. Place the springform pan in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan to create a water bath (this prevents cracks).
  2. Bake for 55-65 minutes, or until the edges are set but the center is slightly jiggly.
  3. Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour.
  4. Remove from the water bath and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

4. Prepare the Topping:

  1. In a small saucepan, heat the berry jam with 2 tablespoons of water over low heat, stirring until smooth.
  2. Allow it to cool slightly, then drizzle over the top of the chilled cheesecake.
  3. Arrange the fresh berries on top, creating a decorative pattern.

5. Serve:

  • Carefully remove the cheesecake from the springform pan.
  • Slice and serve with a fork and a drizzle of extra berry syrup if desired.
