Spaghetti with Fried Shrimp & Fresh Tomatoes

Ingredients:

  • 250g (about 9 oz) spaghetti
  • 300g (about 10.5 oz) shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh tomatoes, diced (or cherry tomatoes halved)
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh basil, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Cook the Spaghetti:
    • In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.
  2. Prepare the Shrimp:
    • While the pasta is cooking, heat olive oil in a large skillet over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Fry the Shrimp:
    • Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using).
    • Cook for about 2-3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  4. Add Fresh Tomatoes:
    • In the same skillet, add the diced fresh tomatoes. Sauté for about 5 minutes until they start to soften. You can add a splash of reserved pasta water if needed.
  5. Combine:
    • Add the cooked spaghetti to the skillet with the tomatoes. Toss to combine, adding more reserved pasta water if needed to create a light sauce.
    • Add the fried shrimp back to the skillet and toss everything together gently.
  6. Serve:
    • Plate the spaghetti and shrimp, garnish with fresh basil, and sprinkle with grated Parmesan cheese before serving.
